Healthier Paneer is Soya Paneer(tofu). How to make at home?


We are always struggling to find balance between taste and health. India, dependent mostly on Cow's milk, for dairy needs are looking for healthier options. Milk with less fat and more protein.

To achieve this, milk farms are launching toned or skimmed or low fat milk variants.
We all know that fat content in Cow's milk Paneer is high and in thrive to get similar taste but healthier options, Indian crowd is now looking into Soya Milk Paneer.

Soya milk, already famous in few South East Asian countries, is entering silently in Indian food habits.
Soya milk is not only good for weight loss but also a good supplement for breastfeeding mommies.
As we always have doubt on factory made Soya Milk Paneer available in market, I am going to share EASY steps of making this at home.

Ingredients:

  1. Soya Beans.
  2. Salt.
  3. Lemon 
  4. Purified water.

Steps to make it.

Step1) Clean Soya beans properly. It will remove polish and dust from the seeds which might spoil the color as well as taste if not done properly.

Step2) Soak Soya seeds overnight or minimum of 6 -8 hours. Make sure that you don't soak it lesser than suggested time neither soak it for much longer time. Soaking it for much longer time might create bad smell in water and hence will spoil milk and paneer both.

Step3) Once it is soaked nicely, clean it again in running water to remove any bad smell. Put it in grinder and do a fine grinding.

Step4) In the step 3 grinding process, it will release milk slowly. After milk is released, take a white cloth, put grinded Soya in that cloth and squeeze it properly.

Step5) Collect milk in a pot, boil it on slow flame. Keep stiring the milk to advoid the burn at the bottom of the pot. In the mean time, get one small bowl of puried water mixed with salt and half lemon juice.

STEPS to Make PANEER. (Tofu)

Step6) When the milk is boiled, reduce the heat if you are using the gas stove or turn off the induction cook. Slowly pour the lemon juice into the milk. Let it rest for 1 minutes. Then turn on the medium heat to boil the milk. After some time, milk will cluster while water will get separated.

Step7) Pour the clustered solid part in white cloth which is inside the basket. Press the solid part with anything heavy on the surface to separate the water. Make sure that white cloth is clean and thin material. After 1 hour you can have the paneer ready. If you want the harder paneer, you can press it for longer time or overnight.
